Me and my girls on Halloween. Brandon is in there too with his little girls. Brandon and I are the Program Directors. He stopped by with his kids to say hey. These are all the girls out of all 17 who were on the right level to dress up. Like my costume? I was a piro lumberjack. I had fun burning my shirt and shorts with a lighter. Guess I got that from Tyler. Hahaha. I had tons of activities for the girls to do and since it was on Sunday we celebrated on Saturday but also did some crafty things on Sunday that were Sunday appropriate. It was a fun weekend. I don't work Saturdays anymore but I was in Vegas the Sunday previous so I worked Saturday (Halloween) to make up for it. It ended up being a lot of fun. I love my job!

Jen's Birthday

Today was Jen's birthday! I gave her a saw. You would think that a saw would be the last thing a girl would want for her birthday, but that's what Jen wanted! She has been talking about getting one so she doesn't have to go to Home Depot all the time to get her 6 free cuts every time she makes a new craft. After I decided to get her a saw for her birthday, she suggested we get one for Christmas. She was very excited when I came home with it much earlier than that! She already has her first piece of wood ready to cut!

The kids and I decorated the house with Birthday decor while she was at the Relief Society broadcast.

Luke and Isaac were very excited about these birthday blower things.

I even made her favorite cake - no bake cheesecake!

The Mount of Charles

So I went to Vegas for my friend's wedding this weekend and as such got to stay with Kjerstin and Steve. Well, they took me up Mt. Charleston for a hike and a picnic. I of course had the brilliant idea to make a film. Kjerstin is Pocohontas, Steve is John Smith, and I am Meiko and Grandmother Willow. I hope you all enjoy :)

New car!!!!!

I bought a new car. My second car purchase and I must say much improved from the first. :) It's my favorite color and it has AIR CONDITIONING! No longer will I forge a summer without a/c. HALLELUJAH! But really I'm very excited and I love it. Here's a pic so you can all see. :)

Happy Anniversary Mom and Dad!

Thirty-one years ago, Robin Goodman and Kenneth Erickson got married in Salt Lake City, Utah. Now, all those years later, theres five kids, two daughters-in-law, one son-in-law and two grandkids as their posterity. Not bad! We love you Mom and Dad! MUAH!

My delicious Easter dinner!

So, I have discovered due to the "kid" in me, I LOVE to celebrate the holidays and make them memorable. I did some research and prepared a fairly traditional Easter dinner. The participants in this meal told me that it was "....delicious. One of the best meals I've had in a long time!" That made me feel great. So, I'm going to share these recipes due to request, and also just for your viewing pleasure. They are easy and delicious. Let me know how YOUR meal goes.

This is the Easter punch that Steve's mom made for him growing up, so I gave it a try. She also makes Fruit Pizza. I didn't get a picture of that, but it was delicious. Let me know if you want the recipe. It's yummy; I put blackberries, fresh pineapple and strawberries on it!

Recipes below:

Ham with Pineapple-Orange Dijon Glaze

Serves 10

1 bone-in ham
1 1/4 C brown sugar
1/3 C pineapple juice
1/3 C orange juice
1/3 C honey
2 T orange zest
2 T Dijon mustard
1/4 t ground cloves

Place ham in a roasting pan, bake at 325 degrees for two hours. Meanwhile, stir remaining ingredients together in a saucepan. Bring to a boil, lower heat and simmer 10 minutes. When ham has baked two hours, brush the ham with the glaze, continue doing so every 10 minutes while baking for another 30 minutes.

Easter Punch

Equal parts pineapple juice and 7-Up
Sliced bananas
Frozen raspberries
Pineapple sherbet (I used orange-pineapple sorbet and it was yummy!)

Asparagus with Thyme

Serves 4

1 clove garlic, halved
1 1/2 lbs. asparagus spears
2 t olive oil
1/4 t dried thyme (I used fresh)
Salt and pepper

Preheat oven to 400 degrees. Rub the cut sides of the garlic over a 9 X 13 inch baking dish, place garlic in dish. Snap off tough ends of asparagus. Add asparagus to dish, drizzle with oil. Sprikle asparagus with thyme and salt and fresh ground pepper to taste. Toss gently and bake at 400 degrees for 20 minutes, stirring once.

Scalloped Potato Gratin

1 1/2 C heavy cream
1 sprig fresh thyme
2 garlic cloves, chopped
1/2 t ground nutmeg
Butter
2 lbs. russet potatoes, peeled (I didn't peel) and cut into 1/8 in. thick slices
Salt and freshly ground black pepper
1/2 C grated Parmesan, plus more for broiling

Preheat the oven to 375 degrees. In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg. While cream is heating up, butter a casserole dish. Place a layer of potato in an overlapping pattern and season with salt and pepper. Remove cream from heat, then pour a little over the potatoes. Top with some grated Parmesan. Make 2 more layers. Bake uncovered, for 45 minutes. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes.

A countdown for Kyle and Jessy!

This is a really cute picture of Kyle and Jessy dancing at my wedding...can't wait to see you dance at your own wedding!!

It was really fun this weekend to scrape up our petty funds and make the trek to Utah to celebrate Jessy. We enjoyed her shower, hanging out as family, going to church, cooking meals together and talking about the wedding plans. They are super excited to get married (and get it over with too...I can relate)! Here are some pics for all to enjoy!

A Tribute to my Ole' Hospital Days

Last year, Kyle, Jessy, Whitney and Will came to visit me in Vegas. They proceeded to write me an ode to the events of my life at that time. Thought it should be shared with the family because it's HILARIOUS! Of course it's sung to the tune of Ice, Ice Baby by Vanilla Ice.

P.S. Maybe we should ask for an encore at Kyle's wedding...just a thought!
